I enjoy making bagels for my men folks. They are much cheaper to make then buy........... if you take the time. They are really not as hard to make as they look! Honey Wheat Bagels 1 1/2 cups warm water 1 tblsp. yeast 2 tblsp. honey or brown sugar 1 tblsp. canola oil 2 tsp. salt 2 cups white flour 1 1/2 cups whole wheat flour 3/4 cup rolled oats Garlic Wheat Bagels: Mix in 2 tblsp. finely chopped onions and 1/2 tsp. garlic powder, when adding flour to above recipe. White Bagels: Use 4 cups white flour in place of white & wheat flour & oats. 1. Mix water, yeast, honey and salt. Allow yeast to foam 3 to 5 minutes. Add oil and flours. 2. Knead until smooth and elastic. 3. Rise, covered for 25-30 minutes. 4. Divide dough into 8 pieces. Gently work into a round ball, punch thumb or finger through the center, GENTLY pull/stretch until center hole is about the size of a quarter. Place on greased surface, cover, let rise 20 minutes. 5. Preheat oven to 375* and place a large kettle of water on stove to boil. 6. After the 20 minute rise, drop bagels, two or three at a time, in boiling water. Boil 30 sec. or so on each side. Remove from water. Place on a plate with a little cornmeal sprinkled on it, (add more cornmeal as needed) before placing on baking tray. (Some people put the cornmeal on the tray. But I don't like to waste that much extra cornmeal.) 7.Sprinkle on topping if desired......... like sesame seeds, poppy seeds, sunflower seeds, dried onions, etc. 8. Bake 20 to 25 minutes. Tops should be golden brown. Yields: 8 per batch Can be made in 1 1/2 to 2 hours. Tip: I like to make 4 or 5 batches right back to back. If I time it right, I can do 4 or 5 batches in about 3 hrs. (I can't do it that fast with the children.) They keep wonderful in the freezer. I freeze them in empty cereal bags. If you like Bagels these are well worth your time! Hope someone has fun making these. On to other things.......... We are enjoying fresh cut lettuce and spinach. I hope, I don't make Jay & Naaman tired of tossed salad because they are getting it every night for supper. Fresh lettuce for lunch sandwiches are great too! I cut fresh spinach into the tossed salad, it adds a wonderful flavor. I had to work on staying thankful about my tooth........... I paid to fill it, took two rounds of antibotics, (I'm allergic to the cheap stuff.) And paid to have it extracted. Dollar wise it would have been better to have had it extracted the first time, but this was the dentist's choice. Such is life. And the vitamins didn't work out either.......... Well, I've had a nice break from doing extra work around here, (since this is my day without children) so I'd better get busy......... I still have a big list to do yet. |
